Mad Jax's seafood recipes

Classic shrimp boil

2 to 3 pounds of spot prawns or coon stripe shrimp

1 1/2 cups of sea salt

2 Tbls. Mad Jax insane seasoning or other seafood seasoning

Using a 8 quart spaghetti pot , fill two thirds full of water, add salt and bring to a rapid boil. Add prawns or shrimp. Time for 3 to 4 minutes. remove from heat and cool immediately. (prawns continue cooking if they are not cooled right away) serve with a ceaser salad and crusty bread. Don't forget plenty of napkins. Enjoy!

 

 


 Coon stripe shrimp cerviche

2 pounds peeled coon stripe shrimp

5 small limes squeezed

1 avocado diced

2 mangos diced

3 green onions chopped

2 roma tomatos diced

Add coon stripe shrimp and onions to the lime juice. Marinate for 1 hour. Add the rest of the ingrediants toss and drain excess liquid. Serve with sliced baquette.

 

 

Grilled Pancetta wrapped spot prawns.

2 pounds of shelled spot prawns

1/4 cup of olive oil

one package of pancetta (12 slices)

Drizzle the spot prawns with olive oil

cut each pancetta slice in half top with a prawn. Roll the pancetta around the prawn and thread 4 to 6 per skewer. Cook over medium heat for approximately 2 to 3 minutes each side on the barbecue.
